Pinot Noir Tradition, Domaine Stentz-Buecher
After 15-20 days maceration the grapes are fermented with punching down twice a day to make sure the juice is in constant contact with the skin. This ensures good colour, tannins and depth. Stephane Stentz believes that punching down is better than pumping over in terms of protecting fresh, primary fruit aromas. The wine is then aged in old oak barrels. This organic domaine was founded in 1975. Today this family business owns 13 hectares around Wettolsheim. Their ethos is all about using nature rather than resisting nature. Tasting Notes
Rich red plum and cherry with a gentle depth from the time in oak. A lovely Alsatian Pinot, full of fruit and spice. The tannins are well-rounded and not at all aggressive. Some signs of earthy notes developing nicely.
