
Sang de Pigeon Adelaide Hills Pinot Noir 2023
Sourced from three sites in the Adelaide Hills: Holland Creek Road in Cudlee Creek, Mawson Road in Lenswood and Gully Road in Piccadilly.
Growing season: High winter rains preceded a very cool spring. Late budburst, flowering and a cool autumn combined for an extremely late vintage.
Winemaking: Hand-picked on 25th March (Cudlee Creek), 13th (Lenswood) and 25th April (Piccadilly). Wild fermented in open fermenter with 33% whole bunches. Matured for 11 months in French oak (11% new, Francois Frères). Unfined. Vegan friendly.

To prepare, he enrolled in wine science in Adelaide and absorbed as much knowledge as he could working stints in Australia with Cullen, Giaconda, Henschke, Shaw + Smith, Coldstream Hills and Veritas; in France with Domaine Leflaive, Meo-Camuzet, Vieux Telegraphe and Trevallon.
